JANE'S RECIPE FILE

'Tis the season for apples and Minnesota produces some of the finest. Here's one of my favorite recipes:

SUPERB APPLE CRISP

12 peeled, sliced Minnesota Haralson Apples
Well buttered 9x12 pan

Sprinkle apples with 1 cup sugar and 2 tsp. cinnamon mixture.

Mix:

2 cups brown sugar
2 cups flour
1 cup magarine

Spread over apples, bake at 350 degrees for 40 minutes.

Great stuff...Enjoy!

Rhubarb is a "spring thing" in Minnesota. This is my favorite rhubarb recipe.

CRUNCHY-TOPPED RHUBARB MUFFINS

3/4 cup brown sugar
1 1/2 cups flour
1/2 tsp soda
1/3 cup oil
1 egg
1/2 tsp salt
1/2 cup buttermilk
3/4 cup finely sliced rhubarb
1 tsp vanilla

Combine sugar, oil, egg, buttermilk and vanilla in mixing bowl. Sift flour, soda and salt together and stir into liquid mix. Blend in rhubarb. Spoon into greased muffin tins, filling cups 2/3 full. Sprinkle with topping: 1/4 c. brown sugar, 1/2 tsp cinnamon, 1/4 c. chopped nuts.

Bake at 325 degrees for 25-30 minutes, or bake in 9x5 loaf pan for 45 minutes.

Makes a dozen muffins.

Tart and crunchy! Enjoy!
