CHOCOLATE CHIP RUM COCONUT COOKIES
3/4 cup shortening or oil
3/4 cup light brown sugar
3/4 cup white sugar
2 eggs
2 1/4 cups all purpose flour
1 tsp. baking soda
1 tsp. salt
3 1/2 cups shredded coconut, toasted
4 cups chocolate chips (I prefer milk chocolate!)
1/4 cup dark rum
Nuts optional, but Macadamia nuts or pecans are nice...
Cream shortening or oil, sugars and rum unti light. Add eggs and beat before adding flour, baking soda and salt to mixture. Finally, stir in coconut, chocolate chips and nuts (optional.) On ungreased cookie sheet drop by teaspoonfuls and then bake in
375 degree oven for 8-10 minutes. Enjoy!
